Things You'll Need: 1 egg + 2 tsp vanilla + 3 tbsp butter or 3 tbsp oil (grapeseed, coconut or vegetable). Instructions: Makes 18-24 cookies. Heat oven to 350 degrees F. Wisk eggs, vanilla, and melted butter/oil in a large bowl. Add baking mix to the wet ingredients and stir until completely combined. Drop 1 tbsp scoops of cookie mix onto a lightly greased cookie tray. Moisten fingers with water and flatten cookies before putting them in the oven (they don't spread out while cooking). Bake for 12-14 minutes or until the cookies start to brown just slightly. Let cool before removing from cookie sheet to prevent cookies from sticking. Save for another day!
