Basmati Rice, Extra Long-Grain.
Rice recipes: (enclosed sheet has many more recipes befitting this elegant rice! We randomly place different recipe sheets in our rice bags!) This rice is imported. Please pick over, rinse and drain. For all recipes, after adding water as recommended, bring to boil than reduce beat to very low, and simmer with pot loosely covered till rice is done (all the water will be gone and each grain will be soft, separate and very long). Plain basmati: combine 1 cup rice, 1 3/4 cup water, butter & salt to taste. Bring to boil & simmer on low heat, loosely covered till done. Let sit for 5 min before serving. Saffron rice: add 1/4 tsp crushed saffron before starting heat. A pinch of cardamom powder will nicely complement saffron, or may be used without saffron. Vegetable rice pulao: 1 cup rice, 1 med potato peeled & diced, 1/2 cup frozen green peas, 1 tbsp butter, 1 tbsp vegetable oil, 1 tsp cumin seed, 1/2 tsp turmeric powder, 1/2 tsp whole or coarse black pepper, 1 tsp salt. Fry cumin seed in very hot oil in a saucepan for 30 secs (cumin will get dark & swell). Add other spices, rice & vegetables, & mix well. Add salt, butter and 2 cups of water (peas may be substituted with chopped spinach, carrots, cauliflower or other vegetables of your choice). Bring to boil, reduce heat to low, loosely cover and simmer (about 12 min).
