Use One or a Combination of the Following: 1/2 pound smoked sausage, cut into bite-sized pieces; 1/2 pound pre-cooked chicken; 1/2 pound peeled and deveined shrimp; optional: 4 tablespoons tomato sauce or ketchup. 1. Place 2 cups water, meat or seafood, Mam Papaul's Jambalaya Mix and tomato sauce in a 3 quart sauce pan. Stir. 2. Bring to a boil. Cover. Lower heat; simmer for 20 minutes. 3. Cook for approx 20 min or until rice is tender. Stir occasionally during cooking. Microwave: Place all ingredients in a 3 quart, covered, microwave-safe casserole dish. Bake at full power for 10 minutes. Continue baking for 20 min or until rice is tender. Stir and serve. Serves 6.
