Preparation: Remove seasoning packet from beans. Place beans in a 5 quart pot, rinse and drain beans. Add 12 cups of water and stir in seasoning packet. Add meat, if desired (see options below). Cover and bring to boil. Reduce heat to medium, uncover pot, stir, and cook 2 to 2-1/2 hours (add water as necessary), or until beans are tender. Serve over rice. Options: Add one pound of sliced smoke sausage, cubed ham, or other meat, for added flavor.
