Heat 1 tablespoon of olive oil in a high-sided pan and brown 1 cup of diced onion until golden. Stir in 1-1/2 cups of Village Harvest Arborio Rice and cook for 1 minute. Add 5 cups of chicken broth, 1 cup at a time, stirring constantly over medium-low heat. Continue adding liquid, and stirring, until the rice is cooked and liquid is absorbed; about 20-30 minutes. Remove from heat, stir in 2 tablespoons of butter and season with salt and pepper. Makes 4 servings.
