You Will Need: 1 lb. Uncooked Boneless Skinless Chicken Breasts, 3 Tbsp. Vegetable oil, 21/4 Cups Hot Water, 2 Eggs.1. CookCut chicken into 1/4- to 1/2-inch pieces. Heat 2 Tbsp. oil in 10- or 12-inch skillet over medium-high heat. Carefully add chicken; cook about 3 minutes, stirring often.2. StirStir in hot water, Seasoning Mix and Rice. Heat to boiling.3. SimmerReduce heat. Cover; simmer about 20 minutes, stirring once, until liquid is mostly absorbed. If not absorbed, increase heat to medium and cook uncovered 2 minutes longer.4. ScrambleIncrease heat to medium. Push rice to side of skillet. Heat 1 Tbsp. oil in other side. Scramble eggs in oil until cooked; remove from heat. Stir eggs into rice. Refrigerate leftovers.
