Stove top instructions: In a large saucepan with tight fitting lid bring 3 & 1/4 cups of water to a boil. Add 2 tablespoons of Vigo olive oil or margarine (optional). Then 1 pkg. Vigo black beans and rice, stirring while boiling for 1 minute. Cover saucepan tightly. Reduce heat to simmer, cook for 20-25 minutes. Fluff and serve. Serving suggestion: For a Latino touch, season Vigo black beans & rice much like a salad. Top with Vigo olive oil, red vinegar and chopped onions. Microwave Directions: combine contents of this package, 3 & 1/2 cups hot tap water and 2 tablespoons Vigo olive oil or margarine (optional) in a 1-1/2 quart microwave casserole dish. Cover and microwave on high for 22 minutes. Stir. Let stand, covered for 5 minutes. Serve.
