What you need: 2 1/2 cups water. 1 egg, well beaten. Soy sauce (optional). Preparations: 1. Combine soup mix with water in medium-size saucepan. 2. Bring to boil, stirring occasionally. 3. Gradually add egg to boiling soup, stirring gently in one direction. 4. Remove from heat, season with soy sauce if desired. For a heartier soup, add cubed tofu, sliced mushrooms and chopped green onions. Makes 3 servings, about 1 cup each as prepared above.
