Directions for one batch of waffles: What you need: eggs, oil, water. 1. Mix: Combine 2 eggs, 2 tablespoons oil, 3/4 cup water or rice milk. Add to 2 cups of dry mix*. Blend well. 2. Bake: Pour onto preheated, sprayed waffle iron to cover bottom. Makes about six 4 inch waffles. Directions for one batch of pancakes: 1. Mix: Combine 2 eggs, 2 tablespoons oil and 1/2 cup water or rice milk. (If you like your pancakes thinner, you can add more liquid.) Add to 2 cups of dry mix*. Blend well. 2. Bake: Pour onto preheated, sprayed pan or griddle. (Makes about six 4 inch pancakes.) Add toppings of your choice and enjoy! Note: Both waffles and pancakes can be frozen after cooking then reheated in a toaster or toaster oven. Optional: Add 1 tablespoon sugar, honey or applesauce; a pinch of cinnamon or nutmeg to the batter. *To properly measure dry ingredients, spoon into measuring cup and level off with the flat side of a knife.
