Cooking: Toss 1 cup Arborio Rice and 1 tablespoon olive oil in saucepan over medium heat to toast. Add 1-3/4 cups water or stock and bring to boil. Stir, cover and reduce heat to simmer, cooking until liquid has evaporated, 30 to 35 minutes. Makes 3 cups cooked. Store in a cool, dry place.
