Rotisserie Chicken in a Red Wine Cream Sauce

1 small rotisserie chicken. I typically buy the ones that H-E-B has already prepared, but you can make your own if you wish.
2 cups red cooking wine
1 8 oz carton heavy whipping cream
1/2 medium onion, chopped
2 cloves of garlic, chopped
1 cup chopped mushrooms
Fresh parmesan or pecorino cheese, grated
Salt and Pepper to taste
1 T olive oil
Spaghetti noodles (or any other type of noodle)

Pull the chicken off of the bone and break into small bite sized pieces. Set aside. Begin cooking as many noodles as you desire. In a saucepan, simmer the heavy whipping cream and wine for 10 minutes. Meanwhile, Saute the onion, mushrooms and garlic on medium heat in a large skillet. Once the onion is translucent, add the wine sauce, chicken, salt and pepper. Let it simmer for another 5 minutes. Serve over the noodles and add the parmesan.
